Ingredients

  • 2 cups basmati rice
  • 2 lbs chicken or beef
  • 1 cup plain yogurt

  • 4 cloves
  • 4 cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 4 cups water
  • Fried onions and cashews for garnish (optional)

Method

  1. Wash the basmati rice in cold water and set aside to soak for 30 minutes.
  2. In a large frying pan, heat the vegetable oil over medium-high heat. Add the chopped onion, garlic, and ginger and sauté for 2-3 minutes until softened.
  3. Add the chicken or beef to the pan and cook until browned on all sides.
  4. Add the cinnamon stick, cloves, cardamom pods, cumin seeds, coriander seeds, turmeric, chili powder, garam masala, salt, and pepper to the pan and stir well to combine.
  5. Reduce the heat to medium and add the plain yogurt to the pan. Stir well and let simmer for 5 minutes.
  6. In a large pot, bring 4 cups of water to a boil. Drain the soaked basmati rice and add it to the boiling water. Let cook for 5-7 minutes until the rice is partially cooked.
  7. Strain the rice and add it to the pan with the chicken or beef. Stir well to combine.
  8. Cover the pan with a lid and let cook on low heat for 10-15 minutes until the rice is fully cooked and all the liquid has been absorbed.
  9. Remove the pan from the heat and let sit for 5 minutes before serving.
  10. Garnish with fried onions and cashews if desired.

Notes

  • If you don't have all the spices listed, you can use a pre-made biryani spice mix.
  • For a vegetarian option, you can substitute the chicken or beef with vegetables such as potatoes, carrots, and peas.
