- 2 cups basmati rice
- 2 lbs chicken or beef
- 1 cup plain yogurt
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp turmeric
- 1 tsp chili powder
- 1 tsp garam masala
- 2 tbsp vegetable oil
- Salt and pepper to taste
- 4 cups water
- Fried onions and cashews for garnish (optional)

Method
- Wash the basmati rice in cold water and set aside to soak for 30 minutes.
- In a large frying pan, heat the vegetable oil over medium-high heat. Add the chopped onion, garlic, and ginger and sauté for 2-3 minutes until softened.
- Add the chicken or beef to the pan and cook until browned on all sides.
- Add the cinnamon stick, cloves, cardamom pods, cumin seeds, coriander seeds, turmeric, chili powder, garam masala, salt, and pepper to the pan and stir well to combine.
- Reduce the heat to medium and add the plain yogurt to the pan. Stir well and let simmer for 5 minutes.
- In a large pot, bring 4 cups of water to a boil. Drain the soaked basmati rice and add it to the boiling water. Let cook for 5-7 minutes until the rice is partially cooked.
- Strain the rice and add it to the pan with the chicken or beef. Stir well to combine.
- Cover the pan with a lid and let cook on low heat for 10-15 minutes until the rice is fully cooked and all the liquid has been absorbed.
- Remove the pan from the heat and let sit for 5 minutes before serving.
- Garnish with fried onions and cashews if desired.

- If you don't have all the spices listed, you can use a pre-made biryani spice mix.
