Ingredients

  • 1/4 cup of raisins
  • 1/4 cup of sliced almonds
  • 1/4 cup of sliced pistachios
  • 2 tbsp of ghee or unsalted butter

Method

Follow these steps to make sweet rice:
  1. Wash the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a large pot, bring 4 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Cook the rice until it is 80% done. Drain the rice and set it aside.
  3. In a small frying pan, heat the ghee or unsalted butter over medium heat. Add the green cardamom pods, cloves, and cinnamon stick. Fry the spices for 1-2 minutes until they become fragrant.
  4. Add the milk and sugar to the frying pan with the spices. Cook the mixture on low heat until the sugar dissolves and the milk starts to thicken.
  5. Add the raisins, sliced almonds, and sliced pistachios to the milk mixture. Cook for another 1-2 minutes until the nuts are lightly toasted.
  6. Add the cooked rice to the milk mixture. Mix everything together until the rice is coated in the milk mixture.
  7. Cover the pot with a lid and cook on low heat for 10-15 minutes until the rice is fully cooked and the milk has been absorbed.
  8. Remove the pot from the heat and let it sit for 5 minutes.
  9. Fluff the sweet rice with a fork and serve hot, garnished with additional nuts if desired.

Notes

To add a rich and creamy flavor to your sweet rice, you can substitute the milk with coconut milk or condensed milk. You can also adjust the sweetness of the dish to your liking by adding more or less sugar.
