Ingredients

For the filling:
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup cooked vermicelli noodles
  • 1 cup lettuce, shredded
  • ½ cup cucumber, julienned
  • ½ cup carrot, julienned
  • ½ cup bean sprouts
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • ¼ cup Thai basil leaves
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 garlic clove, minced
For the dipping sauce:
  • 1 tablespoon hoisin sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 garlic clove, minced
  • 1 tablespoon water
For the rice paper wrapper:
  • 10 rice paper wrappers
  • Warm water

Method

  1. Prepare the filling. In a large bowl, combine the cooked shrimp, vermicelli noodles, lettuce, cucumber, carrot, bean sprouts, mint leaves, cilantro leaves, and Thai basil leaves.
  2. In a small bowl, whisk together the fish sauce, lime juice, sugar, and minced garlic to make the sauce. Pour the sauce over the filling and toss until everything is evenly coated.
  3. Prepare the dipping sauce. In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, lime juice, minced garlic, and water until smooth.
  4. Set up your rolling station. Fill a large bowl with warm water. Dip one rice paper wrapper into the water and let it soak for 10 seconds until it softens.
  5. Place the softened rice paper wrapper on a cutting board or a clean surface. Add 2 tablespoons of the filling in the center of the wrapper, leaving about 2 inches of space on each side.
  6. Roll the rice paper wrapper tightly, starting from the bottom and folding the sides in as you go. Repeat the process with the remaining rice paper wrappers and filling.
  7. Serve the Vietnamese rice rolls with the dipping sauce on the side.

  • You can customize the filling according to your preference. You can add or substitute any vegetables, herbs, or protein that you like.
  • Make sure not to overfill the rice paper wrapper to prevent it from tearing or bursting.
