  • 1/2 carrot
  • 1/2 cup of mint leaves
  • 1/2 cup of cilantro leaves
  • 1/4 cup of chopped peanuts
  • 4 spring rolls (optional)
For the marinade:
  • 1 tablespoon of fish sauce
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of minced garlic
  • 1 tablespoon of vegetable oil
For the dressing:
  • 1/4 cup of fish sauce
  • 1/4 cup of rice vinegar
  • 2 tablespoons of sugar
  • 1/4 cup of water
  • 1 tablespoon of minced garlic
  • 1 red chili pepper (optional)

Equipment

  • Grill or grill pan
  • Large pot for boiling water
  • Bowl for marinating meat

Method

1. Begin by marinating the meat. Combine all of the marinade ingredients in a bowl and add the pork or shrimp. Let it marinate for at least 30 minutes. 2. While the meat is marinating, prepare the vegetables. Wash and chop the lettuce, cucumber, and carrot into thin strips. Set aside. 3. Cook the rice noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process. 4. Grill the pork or shrimp for about 3-4 minutes on each side until it is fully cooked. 5. Mix the dressing ingredients together in a bowl. If desired, add a finely chopped red chili pepper for some extra heat. 6. Assemble the salad by placing a handful of lettuce on the bottom of a bowl. Add a small amount of rice noodles on top, followed by the vegetables and herbs. 7. Slice the pork or shrimp and place it on top of the vegetables. 8. Drizzle the dressing over the salad and top with chopped peanuts and fried spring rolls, if desired.
