Description

Zarda rice is a traditional Pakistani and Indian sweet rice dish. It is made with basmati rice, sugar, ghee, and a variety of aromatic spices. Ingredients

  • 2 cups Basmati Rice
  • 1 1/2 cups Sugar

  • 1/2 cup Raisins
  • 1/2 cup Almonds (sliced)
  • 1/4 cup Pistachios (sliced)
  • 4 cups Water

Method

  1. Wash the basmati rice in cold water until the water runs clear.
  2. Soak the rice in cold water for 30 minutes.
  3. In a large pot, bring 4 cups of water to a boil.
  4. Drain the rice and add it to the boiling water.
  5. Cook the rice until it is tender, but not mushy. Drain and set it aside.
  6. In a frying pan, heat the ghee over medium heat.
  7. Add the cardamom powder and food coloring to the ghee and stir well.
  8. Add the sugar to the frying pan and stir until it dissolves.
  9. Once the sugar has dissolved, add the raisins, almonds, and pistachios and stir well.
  10. Add the cooked rice to the frying pan and stir until it is well coated with the sugar mixture.
  11. Cover the frying pan with a lid and cook on low heat for 10-15 minutes.
  12. Remove the lid and stir the rice gently.
  13. Cover the frying pan again and cook on low heat for an additional 10-15 minutes.
  14. Once the rice is fully cooked, remove it from the heat and let it cool for a few minutes.
  15. Transfer the Zarda rice to a serving dish and garnish with additional sliced almonds and pistachios.
  16. Enjoy!
