- 2 cups of long-grain rice
- 1 can of diced tomatoes
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon of tomato paste
- 1 tablespoon of paprika
- 1 tablespoon of cumin
- 1 tablespoon of thyme
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 3 cups of water
- 1 scotch bonnet pepper
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup of frozen peas
- 1 cup of sliced carrots
- 1 cup of sliced green beans
- 1/4 cup of vegetable oil
Equipment
- A large pot with a lid
- A wooden spoon
- A sharp knife
- A cutting board
Method
- Begin by washing the rice in cold water until the water runs clear. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté until they are soft and translucent.
- Add the diced red and green bell peppers, sliced carrots, and sliced green beans to the pot and sauté for 5 minutes.
- Add the can of diced tomatoes, tomato paste, paprika, cumin, thyme, salt, and black pepper to the pot and stir well.
- Add the washed rice to the pot and stir until the rice is coated with the tomato-based sauce.
- Add 3 cups of water to the pot and stir well. Add the scotch bonnet pepper to the pot and bring the mixture to a boil.
- Reduce the heat to low and cover the pot with a lid. Allow the rice to simmer for 25 minutes.
- Add the frozen peas to the pot and stir well. Cover the pot and allow the rice to simmer for another 10 minutes.
- After 10 minutes, check the rice to see if it is cooked through. If it is not cooked through, cover the pot and allow it to simmer for another 5-10 minutes.
- Once the rice is cooked through, remove the scotch bonnet pepper from the pot and fluff the rice with a fork.
- Serve the African Jollof Rice hot and enjoy!
