- 2 lbs. beef chuck, cut into 1-inch cubes

- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 can (8 oz.) tomato sauce
- 1 can (14 oz.) diced tomatoes
- 1 tbsp. adobo seasoning
- 1 tbsp. oregano
- 1 tbsp. cumin
- 2 bay leaves
- 1 cup water
- Salt and pepper, to taste
- Cilantro, for garnish

Method
1. Heat the olive oil in a Dutch oven or large pot over medium-high heat. 2. Add the onions and green pepper and sauté for 2-3 minutes, or until the vegetables are soft. 3. Add the garlic and sauté for an additional minute. 4. Add the beef and brown on all sides, about 5-7 minutes. 5. Add the tomato sauce, diced tomatoes, adobo seasoning, oregano, cumin, bay leaves, and water. 6. Bring the mixture to a simmer, then reduce the heat to low and cover. 7. Let the carne guisada simmer for 2-2 1/2 hours, or until the beef is tender and the sauce has thickened. 8. Remove the bay leaves and season with salt and pepper to taste. 9.
