Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 carrot, chopped
  • 1 potato, chopped
  • 1/2 cup peas
  • 2 tbsp oil
  • 1 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tbsp sambar masala
  • Salt to taste
  • Coriander leaves for garnish

Method

  1. Wash 1 cup of rice and soak it in water for 20 minutes.
  2. Chop 1 onion, 1 tomato, 1 carrot, and 1 potato.
  3. Heat 2 tbsp oil in a pressure cooker and add 1 tsp mustard seeds and 1 tsp cumin seeds.
  4. When the seeds start to splutter, add the chopped onion and sauté until it turns translucent.
  5. Add the chopped tomato and sauté until it turns mushy.
  6. Add the chopped carrot, potato, and 1/2 cup peas. Mix well.
  7. Add 1 tsp turmeric powder, 2 tbsp sambar masala, and salt to taste. Mix well.
  8. Add 2 cups of water and mix well.
  9. Add the soaked rice and mix well.
  10. Close the pressure cooker lid and cook for 3 whistles on high flame.
  11. Let the pressure release naturally and open the lid.
  12. Drizzle 1 tbsp ghee on top and garnish with coriander leaves.
  13. Serve hot with papad or raita.

Notes

  • You can use any vegetables of your choice for this recipe.
  • If you don't have a pressure cooker, you can cook the rice and vegetables separately and then mix them together.
  • If you don't have sambar masala, you can use a combination of coriander powder, cumin powder, red chili powder, and garam masala.
