Ingredients

Method

1. Rinse the rice in cold water and drain it. 2. In a large pot, bring the water to a boil with the salt, cinnamon stick, cloves, and cardamom pods. 3. Add the rice to the pot and stir it gently. 4. Reduce the heat to low, cover the pot with a lid, and let the rice cook for about 18 minutes. 5. While the rice is cooking, heat the oil in a frying pan. 6. Add the chopped onion and sauté it until it's translucent. 7. Add the minced garlic and grated ginger to the pan and sauté them for a minute or two. 8. Add the chicken to the pan and stir it until it's browned. 9. Add the biryani masala and salt to the pan and stir it until the chicken is coated in the spices. 10. Add the plain yogurt to the pan and stir it until the chicken is coated in the yogurt. 11. Simmer the chicken for about 10 minutes. 12. When the rice is cooked, remove the pot from the heat and let it sit for a few minutes. 13. Spoon the rice onto a platter and spread it out evenly. 14. Spoon the chicken mixture over the rice. 15. Garnish with chopped fresh cilantro, if desired.

You can adjust the amount of spices in this recipe to suit your taste. If you like your biryani spicier, add more biryani masala or a pinch of cayenne pepper.
