Ingredients

  • 500g rice
  • 1 onion, chopped
  • 1 capsicum, chopped
  • 1 carrot, chopped
  • 2 green chilies, chopped
  • 2 tbsp ginger garlic paste
  • 250g boneless chicken, cubed
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp soy sauce
  • 2 tbsp chili sauce
  • 2 tbsp ketchup
  • 2 tbsp oil
  • Coriander leaves for garnish

Method

  1. Wash and soak the rice for 30 minutes.
  2. In a pot, boil 6 cups of water and add the soaked rice.
  3. Cook the rice until it is 80% done, then strain and set aside.
  4. In a pan, heat 2 tbsp of oil and add the chopped onions. Fry until golden brown.
  5. Add the ginger garlic paste and fry for 2 minutes.
  6. Add the cubed chicken and fry until it is cooked through.
  7. Add the chopped vegetables, salt, and black pepper. Fry for 5 minutes.
  8. Add the soy sauce, chili sauce, and ketchup. Mix well and cook for 2 minutes.
  9. Add the cooked rice to the pan and mix well with the chicken and vegetables.
  10. Cover the pan and cook on low heat for 10-15 minutes.
  11. Garnish with coriander leaves and serve hot.

Notes

This dish can be made vegetarian by omitting the chicken and using vegetable stock instead of water to cook the rice.
