Ingredients

  • 1 cup of rice
  • 5 cups of water

  • 10-12 curry leaves
  • 1 tablespoon of ghee

Method

  1. Wash the rice and soak it in water for 10-15 minutes.
  2. Heat the ghee in a pot or pressure cooker.
  3. Add cumin seeds, ginger paste, garlic paste, chopped green chilies, and curry leaves. Saute for a minute.
  4. Add the soaked rice and saute for 2-3 minutes.
  5. Add 5 cups of water and salt. Mix well.
  6. If cooking in a pot, cover it with a lid and cook on medium heat for 25-30 minutes or until the rice is well cooked. Keep stirring occasionally to avoid sticking to the bottom of the pot.
  7. If cooking in a pressure cooker, close the lid and cook for 3-4 whistles. Then, turn off the heat and let the pressure release naturally.

  • You can add more water to adjust the consistency of the kanji.
  • You can also add vegetables like carrots, beans, and peas to make it more nutritious.
  • You can serve it with pickle or papad.
