- 1 cup of rice
- 5 cups of water
- 1 teaspoon of cumin seeds

- 2 green chilies, chopped
- 10-12 curry leaves
- 1 tablespoon of ghee
Equipment
- A pot or pressure cooker
- A ladle
Method
- Wash the rice and soak it in water for 10-15 minutes.
- Heat the ghee in a pot or pressure cooker.
- Add cumin seeds, ginger paste, garlic paste, chopped green chilies, and curry leaves. Saute for a minute.
- Add the soaked rice and saute for 2-3 minutes.
- Add 5 cups of water and salt. Mix well.
- If cooking in a pot, cover it with a lid and cook on medium heat for 25-30 minutes or until the rice is well cooked. Keep stirring occasionally to avoid sticking to the bottom of the pot.
- If cooking in a pressure cooker, close the lid and cook for 3-4 whistles. Then, turn off the heat and let the pressure release naturally.

- You can add more water to adjust the consistency of the kanji.
- You can also add vegetables like carrots, beans, and peas to make it more nutritious.
- You can serve it with pickle or papad.
