Ingredient

  • 2 cups glutinous rice
  • 1 pound pork belly, cut into small pieces

  • 1/4 cup dried chestnuts, soaked and diced
  • 1/4 cup dried lotus seeds, soaked and diced
  • 1/4 cup dried bamboo shoots, soaked and diced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Bamboo leaves for wrapping

Equipment

  • Steamer basket or steaming rack
  • String or twine for tying the dumplings

Method

  1. Wash the glutinous rice and soak it in water for at least 2 hours.
  2. In a pan, heat the vegetable oil and fry the pork belly until golden brown. Add the dried shiitake mushrooms, dried shrimp, dried scallops, dried chestnuts, dried lotus seeds, and dried bamboo shoots. Stir-fry for 2-3 minutes.
  3. Add the soy sauce, oyster sauce, and dark soy sauce. Stir-fry for another 2-3 minutes. Season with salt and pepper to taste.
  4. Drain the soaked glutinous rice and add it to the pan with the pork and vegetable mixture. Mix well.
  5. Take a bamboo leaf and fold it into a cone shape. Fill the cone with the rice mixture, leaving enough room to fold the leaf over the rice.
  6. Use string or twine to tie the dumpling, making sure it is tightly sealed.
  7. Repeat the process until all the rice mixture is used up.
  8. Boil a large pot of water and place the dumplings in a steamer basket or steaming rack. Steam for 2 hours.
  9. Remove the dumplings from the steamer and let them cool for a few minutes before serving.
