Description

Suman is a popular Filipino delicacy made from glutinous rice, coconut milk, and sugar. It is usually wrapped in banana leaves and steamed until cooked. This recipe, however, uses a rice cooker to make the process easier and more convenient.

Ingredients

  • 2 cups glutinous rice
  • 1 can coconut milk (400ml)
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Banana leaves (cut into 4 x 6 inches)

  • Steamer basket
  • Bowl
  • Aluminum foil

Method

  1. Wash the glutinous rice in cold water until the water runs clear. Drain and set aside.
  2. In a bowl, mix together the coconut milk, sugar, vanilla extract, and salt until well combined.
  3. Add the glutinous rice to the bowl and mix until the rice is fully coated with the coconut milk mixture.
  4. Line the steamer basket with banana leaves.
  5. Scoop 2 tablespoons of the rice mixture onto the banana leaf and shape it into a log. Roll the banana leaf to wrap the rice and secure the ends with a toothpick.
  6. Repeat until all the rice mixture is used up.
  7. Place the wrapped rice in the steamer basket and steam for about an hour or until the rice is fully cooked. You may need to add more water to the steamer as it evaporates.
  8. Remove the steamer basket from the heat and let the suman cool for a few minutes.
  9. Unwrap the suman from the banana leaves and wrap it with aluminum foil.
  10. Place the suman in the rice cooker and cook on low heat for about 30 minutes or until fully cooked.
  11. Once done, remove the suman from the rice cooker and let it cool before serving.

Notes

Make sure to soak the glutinous rice in water for at least 30 minutes before using it. This will help soften the rice and make it easier to cook. You can also add other flavors to the suman, such as pandan or jackfruit, to give it a unique taste.
