  • 1 cup of cornstarch
  • 1 cup of all-purpose flour
  • 2 teaspoons of garlic powder
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 egg, beaten
  • 1/2 cup of vegetable oil
  • 1/2 cup of ketchup
  • 1/2 cup of white vinegar
  • 1/4 cup of brown sugar
  • 1/4 cup of soy sauce
  • 1/4 cup of pineapple juice
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 3 cups of cooked rice
  • 2 tablespoons of vegetable oil
  • 2 eggs, beaten
  • 1/2 cup of frozen peas and carrots
  • 1/4 cup of soy sauce
  • 1/4 cup of green onions, chopped

Equipment

  • Large mixing bowl
  • Whisk
  • Large frying pan or wok
  • Slotted spoon
  • Small saucepan
  • Large saucepan or wok
  • Spatula

Method

Step 1: Make the Sweet and Sour Sauce

In a small saucepan, combine the ketchup, white vinegar, brown sugar, soy sauce, and pineapple juice. Cook over medium heat until the mixture comes to a boil. Reduce the heat and let it simmer for 5 minutes.

Step 2: Prepare the Chicken

In a large mixing bowl, whisk together the cornstarch, flour, garlic powder, salt, and black pepper. Add the beaten egg and mix until the chicken is coated. Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the chicken and cook until it is golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove the chicken from the pan and place it on a paper towel-lined plate.

Step 3: Cook the Vegetables

Add the chopped red and green bell peppers and onion to the same frying pan or wok. Cook for 2-3 minutes, or until the vegetables are slightly softened.

Step 4: Combine the Chicken and Vegetables with the Sauce

Pour the sweet and sour sauce over the vegetables in the frying pan or wok. Add the cooked chicken and stir until everything is well-coated with the sauce.

Step 5: Prepare the Fried Rice

In a large saucepan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the beaten eggs and cook until they are scrambled. Add the frozen peas and carrots and cook for 2-3 minutes. Add the cooked rice and soy sauce, and stir until everything is well-combined. Top with chopped green onions.

Notes

For a spicier version of this recipe, add some red pepper flakes to the sweet and sour sauce. You can also use shrimp or pork instead of chicken if you prefer. To make the fried rice even more flavorful, you can add some minced garlic and ginger to the mixture.
