Description

If you're looking for a quick and easy snack or meal, then this teriyaki chicken rice ball recipe is perfect for you! These rice balls are made with fluffy white rice, tender chicken, and a deliciously sweet and savory teriyaki sauce. They're perfect for a quick lunch or snack, and they're also great for packing in your lunchbox or taking on-the-go.

Prep Time

Preparation time for this recipe is around 20 minutes. However, if you need to cook the rice from scratch, add an extra 20 minutes for that.

Cook Time

Cooking time for this recipe is about 10 minutes.

Ingredients

  • 1 cup of cooked white rice
  • 1 small chicken breast, cooked and shredded
  • 1 tbsp teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp water
  • 1 nori sheet, cut into small squares (optional)

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Frying pan
  • Spatula

Method

  1. In a mixing bowl, combine the cooked white rice, shredded chicken, teriyaki sauce, and soy sauce. Mix well.
  2. In a separate bowl, mix the cornstarch and water until smooth. Add this mixture to the rice and chicken mixture, and mix well.
  3. Heat a frying pan over medium-high heat. Using wet hands, form the rice mixture into small balls, about the size of a golf ball. Flatten each ball slightly, and place into the frying pan.
  4. Cook the rice balls for about 2-3 minutes on each side, or until golden brown and crispy.
  5. Remove the rice balls from the pan and let them cool for a few minutes.
  6. If desired, wrap each rice ball with a small square of nori sheet to keep them together.
  7. Serve the rice balls warm or at room temperature.

Notes

These rice balls are best eaten fresh, but they can also be stored in the refrigerator for up to 2 days. To reheat, simply place them in the microwave for 30 seconds to 1 minute.
