Method
- Heat ghee or oil in a heavy-bottomed pan over medium heat.
- Add bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
- Add chopped onions, ginger-garlic paste, and green chili. Sauté for 2-3 minutes until onions turn translucent.
- Add chopped tomatoes, turmeric powder, cumin powder, and salt. Cook for 3-4 minutes until tomatoes become soft and mushy.
- Add soaked and drained rice. Sauté for 2-3 minutes until the rice grains are coated with spices.
- Add water and stir well. Bring the mixture to a boil over high heat.
- Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15-18 minutes until the rice is cooked and the water is absorbed.
- Turn off the heat and let the rice sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with chopped coriander leaves.
- Serve hot with your favorite curry or as a main dish.
