- 4 green bell peppers
- 1 box Uncle Ben's Mexican Rice
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

Method
1. Preheat oven to 375 degrees Fahrenheit. 2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a large pot of boiling water and cook for 5 minutes. Remove from the water and set aside. 3. Cook the Uncle Ben's Mexican Rice according to package instructions. 4. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat. 5. Add the black beans, corn, cumin, chili powder, salt, and pepper to the skillet. Stir to combine. 6. Add the cooked Uncle Ben's Mexican Rice to the skillet and stir until well combined. 7. Place the bell peppers in a baking dish and fill each pepper with the rice and beef mixture. 8. Top each pepper with shredded cheddar cheese. 9. Cover the baking dish with aluminum foil and bake for 30 minutes. 10. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.Notes
