For the rice:- 2 cups long grain rice
- 4 cups water
- 1 tbsp oil
- 1 tsp salt
- 1 tsp whole black peppercorns

- 1 cinnamon stick
- 4 cloves
- 1 kg lamb or chicken
- 2 tbsp Mandi spice mix
- 1 tbsp oil
- 1 tsp salt
- 4 cups water
Equipment
- Tandoor oven or a regular oven
- Large pot with lid
- Grill or oven to cook the meat
Method
Preparing the rice:
- Rinse the rice until the water runs clear.
- Heat the oil in a large pot and add the whole spices.
- Saute the spices for a minute until fragrant.
- Add the rice and saute for 2-3 minutes until coated with the spices.
- Add the water and salt and bring to a boil.
- Reduce the heat to low, cover the pot with a lid and cook for 20 minutes.
- Remove from heat and let it rest for another 10 minutes.
Preparing the meat:
- Wash and pat dry the meat.
- Rub the Mandi spice mix all over the meat.
- Heat the oil in a grill or oven and sear the meat on all sides.
- Transfer the meat to a large pot and add water and salt.
- Cover the pot with a lid and cook on low heat for 1 hour or until the meat is tender.
Assembling the dish:
- Transfer the rice to a large platter.
- Place the meat on top of the rice.
- Serve hot with tomato and chili sauce.
