- 2 cups of basmati rice
- 4 cups of water
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 tomato, chopped
- 1 tablespoon of tomato paste
- 1 tablespoon of cumin powder
- 1 tablespoon of coriander powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1/4 cup of olive oil
- Fresh parsley or coriander for garnish

Method
- Wash the rice thoroughly in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
- Heat the olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for 2-3 minutes until softened.
- Add the minced garlic and sauté for another minute.
- Add the chopped bell peppers and tomato and sauté for 2-3 minutes until softened.
- Add the tomato paste, cumin powder, coriander powder, turmeric powder, paprika, and salt. Stir well to combine.
- Drain the soaked rice and add it to the pot. Stir well to coat the rice with the spice mixture.
- Add 4 cups of water to the pot and stir well. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot with a lid, and simmer for 20-25 minutes until the rice is cooked and the water has been absorbed.
- Remove the pot from the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and transfer it to a serving dish. Garnish with fresh parsley or coriander if desired.
