To make authentic biryani rice, you will need:- 2 cups basmati rice
- 1 lb. chicken or lamb, cut into small pieces
- 1 cup plain yogurt
- 1 tsp. turmeric powder
- 2 tsp. cumin seeds
- 1 tsp. coriander seeds
- 1 tsp. fennel seeds
- 4-5 green cardamom pods
- 1 cinnamon stick
- 6-7 cloves
- 1 bay leaf
- 1 large onion, sliced
- 4-5 garlic cloves, minced
- 2-3 green chilies, chopped
- 1/4 cup vegetable oil
- 2 tbsp. ghee or clarified butter
- Salt to taste
- 2 cups water
- Fried onions and chopped cilantro for garnish

To make this biryani rice recipe, you will need a large pot with a tight-fitting lid, a skillet, a mixing bowl, and a strainer.Method
- Wash the basmati rice in cold water and soak it for at least 30 minutes.
- In a mixing bowl, add the yogurt, turmeric powder, and salt. Mix well and add the chicken or lamb pieces. Marinate for 2 hours.
- In a skillet, heat the oil and ghee. Add the cumin seeds, coriander seeds, fennel seeds, green cardamom pods, cinnamon stick, cloves, and bay leaf. Fry for 1-2 minutes until fragrant.
- Add the sliced onions, garlic, and chopped green chilies. Fry until the onions are golden brown.
- Add the marinated meat and fry for 5-7 minutes until the meat is browned on all sides. Add 2 cups of water and bring to a boil. Reduce the heat and let it simmer for 10-15 minutes until the meat is cooked.
- In a large pot, add the soaked rice and 4 cups of water. Bring to a boil and cook the rice until it is 75% done. Drain the rice using a strainer.
- Layer the rice on top of the cooked meat. Cover the pot with a tight-fitting lid and cook on low heat for 10-15 minutes until the rice is fully cooked.
- Garnish with fried onions and chopped cilantro.
- Serve hot with raita or any side dish of your choice.
