- 4 ripe plantains
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp adobo seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup tomato sauce
- 1/2 cup beef broth
- 1 cup shredded mozzarella cheese
- 1 egg, beaten
- 2 tbsp vegetable oil

Method
1. Preheat the oven to 350°F. 2. Peel the plantains and slice them into thin rounds. 3. Heat the vegetable oil in a frying pan over medium heat. 4. Fry the plantains for about 2 minutes on each side or until they are golden brown. 5. Place the fried plantains in a single layer in a baking dish, making sure to cover the bottom of the dish. 6. In the same frying pan, cook the ground beef over medium-high heat until it is browned. 7. Add the chopped onion, garlic, and green pepper and cook until the vegetables are soft. 8. Add the cumin, oregano, adobo seasoning, salt, and black pepper and stir to combine. 9. Add the tomato sauce and beef broth and bring to a simmer. 10. Let the mixture simmer for about 10 minutes or until the sauce has thickened. 11. Spread the beef mixture over the plantains in the baking dish. 12. Sprinkle the shredded mozzarella cheese over the beef mixture. 13. Place another layer of plantains on top of the cheese. 14. Brush the beaten egg over the top layer of plantains. 15. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.Notes
