Description:

Thattai is a traditional South Indian snack that is crispy and crunchy, perfect for tea time or as a snack. It is made from rice flour and spices. This recipe is easy to make and requires only a few ingredients.

Prep time:

10 minutes

Cook time:

20 minutes

Ingredients:

  • 1 cup rice flour
  • 1/4 cup urad dal flour
  • 2 tbsp sesame seeds
  • 1 tsp red chili powder
  • 1/2 tsp asafoetida
  • 1 tsp salt
  • 2 tbsp butter, melted
  • 1/2 cup water (approx)
  • Oil for frying

Equipment:

  • Mixing bowl
  • Saucepan
  • Frying pan
  • Slotted spoon
  • Rolling pin

Method:

  1. In a mixing bowl, add rice flour, urad dal flour, sesame seeds, red chili powder, asafoetida, and salt. Mix well.
  2. Add melted butter to the mixture and mix it well with your hands.
  3. Add water little by little and knead it into a smooth dough. The dough should not be too hard or too soft.
  4. Divide the dough into small portions and shape them into balls.
  5. Take a ball and place it on a flat surface. Flatten it with a rolling pin to form a thin disc.
  6. Heat oil in a frying pan. Once the oil is hot, gently slide the flattened disc into the oil.
  7. Fry both sides until it turns golden brown and crispy.
  8. Remove it from the oil using a slotted spoon and place it on a paper towel to remove excess oil.
  9. Repeat the same process for the rest of the dough balls.
  10. Store the thattai in an airtight container once it cools down.

Notes:

  • Make sure the dough is kneaded well, or else the thattai will not hold their shape while frying.
  • Adjust the spice level according to your preference.
  • Make sure the oil is hot enough before frying the thattai.
