  • 1 green bell pepper, chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. saffron threads
  • 1/4 cup chopped fresh parsley
  • 2 tbsp. olive oil
  • Salt and freshly ground black pepper, to taste

Method

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.

  3. Add the rice to the pot and stir well to coat the grains with the oil and vegetables. Cook for about 3 minutes, or until the rice is lightly browned.
