Ingredients

  • 2 green chilies, chopped (optional)
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Coriander leaves for garnishing

Equipment

  • Pressure cooker or rice cooker
  • Pan
  • Spatula
  • Chopping board

Method

  1. Wash the rice and soak it in water for 20 minutes.
  2. Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions, green chilies, and ginger-garlic paste. Saute until onions turn translucent.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add turmeric powder, red chili powder, and garam masala. Mix well.
  6. Add chopped vegetables and salt. Mix well and cook for 5-6 minutes until the vegetables are cooked but still retain their crunchiness.
  7. Add soaked rice and mix well.
  8. Add 2 cups of water and mix well.
  9. Cover the pressure cooker or rice cooker and cook the rice until it is done.
  10. Garnish with coriander leaves and serve hot.

Notes

You can add any vegetables of your choice to this dish. You can also add some grated coconut while cooking to enhance the flavor of the dish.
