Description

Vietnamese rice cake or "Banh Chung" is a traditional dish served during the Lunar New Year. Method

  1. Soak the glutinous rice and mung beans overnight.
  2. Cut the pork belly into small pieces and marinate with salt, fish sauce, and black pepper.
  3. Wash the banana leaves and cut them into rectangular pieces.
  4. Place two pieces of banana leaves on top of each other and fold them to make a pocket.
  5. Add a layer of rice, followed by a layer of mung beans, and then a layer of pork belly.
  6. Repeat the layers until the pocket is full, then fold the banana leaves to seal the pocket.
  7. Tie the pocket with string to secure it.
  8. Place the rice cake in a steamer basket and steam for 4 hours.
  9. Remove the rice cake from the steamer and let it cool before serving.
  10. To serve, remove the banana leaves and cut the rice cake into slices.

Notes

It is important to use glutinous rice for this recipe, as regular rice will not stick together properly. The mung beans can be substituted with other types of beans or even meat if preferred.
