- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1/4 tsp fenugreek powder
- 1/4 tsp asafoetida powder
- 10-12 curry leaves
- 2 tbsp oil
- Salt to taste

Method
- In a small saucepan, heat the tamarind paste with 1/2 cup water until it comes to a boil. Turn off the heat and set aside.
- In a frying pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
- Add the chana dal, urad dal, and dried red chili. Fry until the dals turn golden brown.
- Add the curry leaves, turmeric powder, red chili powder, coriander powder, cumin powder, fenugreek powder, and asafoetida powder. Fry for 1-2 minutes.
- Add the tamarind water to the pan and stir well. Let it simmer for 5-7 minutes until the mixture thickens.
- Add salt to taste and mix well.
- In a large mixing bowl, add the cooked rice and the tamarind mixture. Mix well so that the rice is coated evenly.
- Transfer the rice to a serving dish and garnish with some fried cashews and peanuts.
- Your tamarind rice is ready to serve!
