Ingredients

  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 tsp fenugreek powder
  • 1/4 tsp asafoetida powder
  • 10-12 curry leaves
  • 2 tbsp oil
  • Salt to taste

Method

  1. In a small saucepan, heat the tamarind paste with 1/2 cup water until it comes to a boil. Turn off the heat and set aside.
  2. In a frying pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  3. Add the chana dal, urad dal, and dried red chili. Fry until the dals turn golden brown.
  4. Add the curry leaves, turmeric powder, red chili powder, coriander powder, cumin powder, fenugreek powder, and asafoetida powder. Fry for 1-2 minutes.
  5. Add the tamarind water to the pan and stir well. Let it simmer for 5-7 minutes until the mixture thickens.
  6. Add salt to taste and mix well.
  7. In a large mixing bowl, add the cooked rice and the tamarind mixture. Mix well so that the rice is coated evenly.
  8. Transfer the rice to a serving dish and garnish with some fried cashews and peanuts.
  9. Your tamarind rice is ready to serve!
