- 2 cups cooked rice
- 1/4 cup tamarind extract
- 1 tsp mustard seeds
- 2 tbsp peanuts
- 2 tsp chana dal
- 2 tsp urad dal
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 3-4 dried red chilies
- 10-12 curry leaves
- 2 tbsp oil
- 1/4 tsp asafoetida
- Salt to taste

- Heavy-bottomed pan
- Spatula

Method
- In a heavy-bottomed pan, heat oil over medium flame. Add mustard seeds, chana dal, urad dal, cumin seeds, dried red chilies, and curry leaves. Sauté until the mustard seeds crackle and the dals turn golden brown.
- Add turmeric powder and asafoetida. Mix well.
- Add tamarind extract and salt. Cook until the mixture thickens and the raw smell of tamarind disappears.
- Add cooked rice to the mixture. Mix well.
- Reduce the flame to low and cook for 5-7 minutes, stirring occasionally.
- Switch off the flame and let the rice cool for a few minutes.
- Add roasted peanuts to the rice and mix well.
- Andhra Tamarind Rice is ready to serve.

- You can use leftover rice to make this dish.
- Adjust the amount of tamarind extract according to your taste.
- You can add grated coconut, cashews, or raisins to the dish for added flavor.
