Method

Step 1:

Wash the basmati rice and soak it in water for 30 minutes.

Step 2:

In a frying pan, dry roast the coriander seeds, cumin seeds, and fennel seeds for 2-3 minutes until fragrant. Let them cool and then grind them into a fine powder.

Step 3:

In a blender, blend the tomatoes into a smooth paste.

Step 4:

In a pressure cooker, heat oil and add mustard seeds. Once the mustard seeds start to splutter, add chopped onions and green chillies. Cook until the onions turn translucent.

Step 5:

Add ginger-garlic paste and cook for 1-2 minutes.

Step 6:

Add the tomato paste, red chilli powder, turmeric powder, ground spice powder, and salt. Cook until the oil separates from the mixture.

Step 7:

Drain the water from the soaked rice and add it to the pressure cooker. Mix well.

Step 8:

Add 3 cups of water and mix well. Close the lid of the pressure cooker and let it cook for 2 whistles on high flame.

Step 9:

Once the pressure is released, open the lid and fluff the rice with a fork.

Step 10:

Garnish with coriander leaves and serve hot with raita or papad.

  • You can adjust the amount of red chilli powder according to your taste.
  • You can also add vegetables like peas, carrots, and potatoes to make it more nutritious.
  • You can use ghee instead of oil to enhance the flavor of the dish.
