Method
- Preheat the oven to 375°F.
- Cut the acorn squash in half and remove the seeds and strings.
- Place the squash halves cut side down on a baking sheet and bake for 30 minutes.
- While the squash is baking, cook the wild rice in a large pot with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 35-40 minutes or until the rice is tender.
- Heat the olive oil in a large skillet over medium heat.
