Ingredients

  • 1 tsp of cardamom powder

Method

  1. Wash the rice and moong dal in water and soak them separately for 10 minutes.
  2. Heat the ghee in a pressure cooker and add the cashews and raisins. Fry them until they turn golden brown and set them aside.
  3. In the same pressure cooker, add the soaked rice and moong dal and fry them for 2 minutes.
  4. Add 4 cups of water to the pressure cooker and pressure cook for 3 whistles.
  5. Meanwhile, heat a heavy bottomed pan and add the jaggery and 1/4 cup of water. Stir it until the jaggery dissolves completely.
  6. Once the pressure cooker cools down, open the lid and add the jaggery syrup to it.
  7. Stir it well and cook it on low flame until the Sweet Pongal becomes thick and creamy.
  8. Add the cardamom powder and mix it well.
  9. Add the fried cashews and raisins and mix it well.
  10. Serve the Sweet Pongal hot.

Notes

  • You can adjust the quantity of jaggery according to your taste.
  • You can also add grated coconut for extra flavor.
  • If you do not have a pressure cooker, you can cook the rice and moong dal in a heavy bottomed pan.
