The ingredients required for Sweet Pongal are:- 1 cup of rice
- 1/2 cup of moong dal
- 1 cup of jaggery
- 1/2 cup of ghee

- 1/4 cup of raisins
- 4 cups of water
- 1 tsp of cardamom powder
Equipment
The equipment required for Sweet Pongal are:- Pressure cooker
- Heavy bottomed pan
- Wooden spoon
Method
- Wash the rice and moong dal in water and soak them separately for 10 minutes.
- Heat the ghee in a pressure cooker and add the cashews and raisins. Fry them until they turn golden brown and set them aside.
- In the same pressure cooker, add the soaked rice and moong dal and fry them for 2 minutes.
- Add 4 cups of water to the pressure cooker and pressure cook for 3 whistles.
- Meanwhile, heat a heavy bottomed pan and add the jaggery and 1/4 cup of water. Stir it until the jaggery dissolves completely.
- Once the pressure cooker cools down, open the lid and add the jaggery syrup to it.
- Stir it well and cook it on low flame until the Sweet Pongal becomes thick and creamy.
- Add the cardamom powder and mix it well.
- Add the fried cashews and raisins and mix it well.
- Serve the Sweet Pongal hot.
Notes
- You can adjust the quantity of jaggery according to your taste.
- You can also add grated coconut for extra flavor.
- If you do not have a pressure cooker, you can cook the rice and moong dal in a heavy bottomed pan.
